🥣 White Bean, Kale & Sausage Soup

This recipe is the perfect hearty, nourishing soup that tastes delicious! I have made this multiple times this winter. This is a great recipe to share with friends, make for new moms and even freeze! I hope you enjoy!!

Ingredients

  • 1 (15-oz) can white beans (cannellini or navy), drained and rinsed

  • 1 cup pasta (fusilli works well)

  • ¼ cup olive oil

  • 1 pound ground sweet Italian pork sausage

  • 1 large onion, diced (about 1 cup)

  • 2 large carrots, sliced diagonally (about 2 cups)

  • 3 celery stalks, sliced diagonally (about 1 cup)

  • Salt

  • 1 teaspoon dried basil

  • 6–8 cups chicken broth (depending how brothy you like it)

  • 1 cup diced tomatoes with juices (canned or frozen)

  • 2 cups kale, stems removed and cut into 1-inch pieces

  • Fresh parsley for garnish (optional)

Instructions

  • Brown the Sausage

In a large soup pot, heat olive oil over medium heat.
Add sausage and let it sit without stirring for 1–2 minutes to brown.
Stir and continue cooking, breaking it into chunks, until fully cooked and lightly browned.

Remove sausage to a bowl and set aside.

  • Sauté the Vegetables

If needed, add a little more olive oil.
Add onion, carrots, and celery.
Season with a generous pinch of salt and add dried basil.

Sauté about 5 minutes, until onions are translucent and carrots begin to soften.

  • Cook the Pasta

Cook pasta according to package instructions.
Drain, toss with a little olive oil to prevent sticking, and set aside.

  • Build the Soup

Add:

  • 6–8 cups chicken broth

  • Diced tomatoes with juices

  • Kale

Bring to a simmer over medium heat.
Reduce heat to low, cover, and simmer 10–15 minutes until carrots are tender and kale is soft.

  • Add Beans & Sausage & Pasta

Stir in:

  • Drained and rinsed canned beans

  • Cooked sausage

Simmer another 5 minutes to warm through.
Finally ad in pasta, taste and adjust salt as needed.
