Simple Nourishing Waffles!

Hi friends! Today I’m sharing this incredible waffle recipe, originally from Restorative Roots. I truly make these at least a couple of times a month—they taste like classic waffles, yet are made without any flour or sugar. Because of that, they leave me feeling full, energized, and nourished throughout the morning. I use a Belgian waffle maker, but a friend shared that the batter works beautifully as pancakes, too. I hope you love them as much as I do—they also freeze so well! ✨

Simple Nourishing Waffles

Ingredients

  • 2 cups oats

  • 6 eggs

  • 2 cups cottage cheese

Instructions
Add all ingredients to a blender and blend until smooth.
Heat your Belgian waffle maker (I use setting 5) and lightly coat with coconut oil spray.
Pour in the batter and cook until golden and set.

This recipe makes about 4–5 large waffles. They freeze beautifully—just reheat and enjoy! ✨
